Bacon wrapped scallops with balsamic vinaigrette, thyme, roasted potatoes and kale spinach salad.

 1 bacon
 1 dash balsamic vinegar
 1 dash salt and pepper
 1 toothpicksas many as needed

This recipe is just for preparing and cooking the bacon wrapped scallops.

Pre-cook the bacon in a frying pan or oven just enough so that it's not crispy and can easily wrap around the scallops.

Pat the scallops dry with a paper towel and season with salt and pepper.

Wrap the scallops with the bacon slices and use a toothpick to keep them together. Pierce the round side of the scallops so that you can flip them over easily.

Place the bacon wrapped scallops in a frying pan on medium-high heat and cook for about 3 minutes per side. The scallops should look opaque all the way through, don't overcook them as they will be too chewy.

Remove from pan and drizzle balsamic vinegar over top.

Serve!
